From a young age I struggled with loneliness and depression. But it was during those times in the valley when I sought Him. And it was there He found me and Loved me. This life is a journey and this blog is about my journey. It's about finding Him in everything. It's about learning to hope, love, and forgive. It's about my daily ups and downs, my sweet kitties who bring me so much joy, and my amazing husband who I am honored to share my life with. It's about learning to cook and hoping to one day be a back up dancer for the Black Eyed Peas. It's about my passion for creating and crafting. It's about my struggles and prayers and funny stories. It's about ...redemption.

Kids say the darndest things

Scott and I went to visit our friends, Patrick and Cheryl, who just had a sweet baby boy a few days ago.

For those of you who don't know Patrick and Cheryl, this is their third child. Their oldest is a darling little girl, Saige, who is three. Then there is Meadow Rae, their precious little one year old.

This time Patrick and Cheryl had a sweet baby boy named Reed Owen.

Anyway, I was talking to Saige asking her if she loved her new baby brother. Then I asked her if her new baby brother was "pretty." I figured this was a term these two little girls new well, and I wasn't sure if they ever even heard the word handsome. Ha!

Saige turns to me and says, "No, because he's a boy and that means he has to have a job and play baseball!"

LOL, wow! She's three!!!

things He painted last week

Last week Scott and I traveled to Mesa, Arizona to vacation. From there we met his brother in LA and camped one night at Joshua Tree on our way home. Here are just a few photos of the beautifully painted sky we saw along the way.

Last Night Story Time

Last night I asked Scott to tell me a story from his childhood.

He started telling me about this trip his family took to see some crater caused by a meteor. I asked him if it was the meteor that killed the dinosaurs!

From there we got to talking about dinosaurs and I told him I was confused. Why would God create a world with dinosaurs and destroy it and later create a world with man?

Scott said he thinks God created dinosaurs to set evolution in motion. Ok, ok...
But it still doesn't make sense to me.

From there we were talking about the difference between animals and man. Scott believes we evolved from them, but I think man and animals have one major difference.

Sorry jen. But hey, I could very possibly be wrong.

I just tend to think that man is able to have a relationship with God. That we are made to commune with Him. And that's where man and animals differ.

Scott said, "Well, who is to say that Nikita doesn't have a relationship with God. Who is to say that she is not saying her night time prayers right now?"

Wow. wow. I don't know?

Everything's better cooked in bacon drippings!

So last night I made this fantastic Baked Potato Soup!

*sidebar*
I just have to say that I absolutely love CHILIS! I love everything on their menu, well except ribs because I don't see the point in getting all messy for such a small amount of meat. But they make this VERDE BURGER that is to die for, and don't get me started on the southwestern eggrolls! Deli.ci.ous!!! And for some reason I just love all their soups and salads. I'm not a soup and salad kind of girl, but there is something about chilis' soups and salads that I can not resist. Probably all the fat and artificial bad crap they put in it! YEA! But it was at chilis that I first experienced Baked Potato Soup!

Anyway, I found a recipe online for this baked potato soup and the instructions were to first cook the bacon (oh yeah, jen and any other vegetarians and maybe you too Meeka, don't read this) and save the drippings. Mmmmmm! Then saute the onions and garlic in the bacon drippings!

Man o man, that is fantastic! Then of course you build the soup around that.

My point is is that today I made BLTs for Scotty for lunch. After my success last night cooking with the BD (bacon drippings), I decided to cook my tomatoes in the drippings! Ummm....YUM!

Scott loved the BLTs and I told him how I cooked the tomatoes in BD. He then made fun of me and said, "So now you are going to start cooking EVERYTHING in bacon drippings?"

Well, if it makes it taste better, why not!!!! Hmmm...what else can I cook in BD???
